I kind of liked Christopher Shores books, Malta: The Hurricane Years and Malta: The Spitfire Years.

Hi - Lex McAulay's 'Against All Odds' is the story of a small band of RAAF pilots who flew with fighter squadrons in the Battle for Malta in 1942. Provides quite a detailed picture of the action.. ISBN 0-09-169570-8 Published by Hutchinson (1989)

Another good reference is James Holland's 'Fortress Malta - An Island Under Siege 1940-43' ISBN 0-304-36654-4 Pub Phoenix (2003).
