"Lots of 109s" in the Gifhorn area might point to remnants of one of the replacement JGs. According to a quick search of M.Holms site some parts of them were disbanded at places near Gifhorn (Braunschweig and Helmstedt) shortly before the war's end: II./JG 105, II./JG 107 and I./JG 110.
Maybe the planes found at Gifhorn have belonged to one or more of those units. Do you have any ID's for those planes? What's the source for your info?
