There were actually a few....
Obst Gunther Specht had a bad left eye which was hit by shrapnel while attacking a Wellington bobmber on December 3,1939! He fought throughout the war before being KIA on January 1,1945. he flew with ZG-26 & JG-11,scoring 34 Victories.

Ofw Stefan Litjens, JG-53, lost the sight in his right eye after being shot down in a battle with I-16 on September 11,1941 but returned to duty afull year later and scored another 16 victories before being injured in his left eye on March 1944. He then left combat duties. He died in 2002

Oblt. Wilhelm Hoffman, JG-26, lost the ability to focus his right eye in a ground incident on October 1944 but continued to fly combat missions until being KIA on March 1945

All the above won the Knights Cross with the Luftwaffe.
