First of all, thanks for sharing those highly interesting pictures taken by your father. I'm currently away from home so can't check in my references. To answer your question about the single engined transport plane, it is a Junker Ju 34 Hau. This type was mainly used by flying school training units and or unit hacks.
Another plane already, fully known is the Fw 190 in British markings. You will get a lot if answers to your questions here.
