(A) The Germans rated damage to aircraft in percentages: 60%+ is a write-off; 99% is a total loss on friendly territory; 100% a total loss at sea or on enemy territory.
(B) Places to look up information are National Archives file AIR40/45 (crashed enemy aircraft reports) and the Luftwaffe Quartermaster General's loss reports on microfilm at the Imperial War Museum — I don't have the relevant bits of either, but someone here probably has. Also there's the series of books
"Luftwaffe Crash Archive" published by Wing Leader.
