The prime source of information for locating just about everything on your list would be a copy of Kelly's Directory for Aberdeen from the late '30s or early war years. Besides an index of services/companies, with their addresses, it will have street by street indexes and even the names of residents. If you can find both a prewar edition and an immediate postwar edition, it is often possible to trace war damage and see what buildings were beyond repair and which could be saved. Often a local authority will have saved one of each year of publication and hold them somewhere in the library system. Start with the largest of the city's local libraries, who should be able to redirect you if they don't physically stock them.
