From the way he treated the Master during landing, it does not sound like he was an instructor. Sounds more like he was on his first solo flight or something similar, having received far too few conversion hours.
To be able to set correct flaps and propeller pitch is very basic when it comes to flying.
Was he actually a fully trained military pilot when he came to England? If he had joined the Armée de l'Air in March 1940 it is even possible he hadn't started any flight training by May and did not receive any such training until he came to Britain.
