right off the top of my head I can't think of any one source that lists all the factories.
I have just sort of pieced it together from little bits and pieces here and there.
most of that from texts on specific aircraft.
i.e. LaGG-3 figures from books on LaGG's, Yak figures from books on Yak's etc.
A.T. Stepanets lists all the factories that Made the Yak-1/3/7/9 and that text is available on the net,although only in Russian.

dates for the Yak-7 and -9 can be found in the Aircraft monograph #14 by Robert Bock (AJ Press)
