Hi Chris,
Has there been any further information as to the identity of the Dornier?

I have not been following this post religiously, but thought I would look in WO 208/5158 Military Intelligence (M.I.8 file) of German Intercepts, which includes German crew de-briefs from January 1941. The main August 1940 correspondence is a brief list (6 sheets) of intercepted intelligence mainly about the weather up until 23rd August 1940, with odd rererences to GAF lettering.

Latest update is:

The identity still eludes us but she’ll let us know when she’s ready! However, the main priority is obviously the conservation side of the equation and that is proceeding well
