Fight On! Luftwaffe field strength 9 May 1945

Assuming Doenitz had given the order to fight on to the death, given the fuel situation, approximately how many fighters and bombers were the Germans still capable of fielding, in theory and in practice, from the territories they still held on 8 May 1945 ie Kurland, North Italy, Norway, Denmark, North Holland, Austria, Bavaria, Breskens Pocket, parts of Czechoslovakia and Yugoslavia etc?

The surrender in Italy took effet on 2 May 1945. After evacuation and destruction, the only aircraft remaining in Luftwaffe hands in Italy were at Bolzano: one Ju 188 recon machine, a Bf 108 and three Fi 156.

A "fight to the death" by these aircraft might have occupied up to five minutes, I'd guess.
