However, I am wondering if the documents you quoted actually give the total number of manufactured aircraft, or only the number of airplanes accepted by the Luftwaffe, which was a different number.

In the total number of manufactured aircraft, airplanes retained by Henschel for test purposes, destroyed during bombing raids on HFW, or scrapped during Sept. 1944, when the order to halt production arrived, etc., should be included. That's why my calculation of the final number, based on Werknummer blocks, gives 1158 manufactured airplanes.

Obviously, more research of primary sources, including airmen's Flugbücher, is needed.
