The only "foreign" fighter with german markings ever used operationally was the Macchi C. 205 of II./JG 77 (September-December 1943). Everything else is crap...
A very recommendable (and very old) book about captured allied a/c is Werner Lerche´s "Testpilot auf Beuteflugzeugen", but it is very hard to get, and I don´t know if there was an English edition...
